Sometimes simple is better. These easy meals will make cooking seem less like a chore and more like a treat.
3 Tbsp vegetable oil, divided
4 thinly sliced boneless, skinless chicken breasts
Salt & pepper
½ tsp garlic powder
½ tsp onion powder
½ tsp basil
½ tsp smoked or regular paprika
2 tbsp butter, sliced
Heat 1 ½ tbsp vegetable oil over medium-high heat in a large skillet. Pat the chicken breasts dry with a paper towel. Drizzle a little bit of vegetable oil over each chicken breast and rub it on both sides. In a small bowl, combine the garlic powder, onion powder, basil and paprika. Season the chicken breasts with salt and pepper to taste then rub the seasoning mixture over each chicken breast. Place the chicken in the skillet and cook for 5 – 7 minutes then flip and continue to cook another 5 minutes. Add the butter slices around the chicken in the skillet and continue to cook 1 – 2 minutes or until chicken is cooked through.
Busy Day Soup
1 lb ground beef
1 packet onion soup mix
1 ¾ cup frozen mixed vegetables
5 cups water
¼ tsp salt
1 (28 oz.) can diced tomatoes, undrained
1 cup uncooked macaroni noodles
In a large pot, cook ground beef over medium heat until browned; drain. Add water, onion soup mix, salt, and tomatoes with juice. Simmer for 1 hour on medium-low heat. Add macaroni and frozen vegetables and cook for an additional 15 – 20 minutes on medium heat.
Easy Crab Cakes
3 tbsp mayonnaise
4 tsp lemon juice
1/8 tsp red pepper flakes
1 tsp dried tarragon
1 tbsp minced green onion
8 ounces crabmeat
½ cup crushed Ritz crackers
1 tbsp butter
In a medium size bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon, and green onions. Gently stir in crabmeat. Mix in cracker crumbs. Heat butter in a skillet over medium heat. Form crab mixture into 4 patties. Place patties in skillet and cook until golden brown about 5 minutes each side.
Green Chili Chicken
4 boneless chicken breasts
1 ½ cups shredded pepper jack cheese
1 (4 oz.) can diced green chiles, drained
1 tbsp fajita seasoning
Preheat the oven to 350.
Spray a small baking dish with non-stick cooking spray. Evenly rub each chicken breast with the fajita seasoning. Top with green chiles. Bake for 20 minutes. Sprinkle with cheese. Bake for an additional 10 minutes or until cheese melts and chicken is cooked through.
